Super Simple Banana Oat Pancakes

Pancakes have always been one of my fave breakfasts (nearly as good as Almond Croissants!) and I love making them for our friends when we go away camping.


In most cases they tend to be more of a treat or sometimes food, but these wholefood, gluten free, dairy free, egg free, refined sugar free pancakes are so good for you you can eat them any time of day, every day of the week!


They also make a great hiking or lunchbox snack, especially topped with peanut butter and chia jam or some fresh fruit. Mmmmmmm


One of my fave things about these pancakes as I can make them up wherever we are, from staple pantry items we always have on hand!

Simple Banana Oat Pancakes

“One of my best tips is to make sure you always keep your freezer stocked with peeled bananas as they can be used in so many recipes, including this one!
Like your pancakes a bit sweeter? Double the number of bananas and leave one only half mashed for chunky banana pancakes”

Banana Oat Pancakes


Serves

This recipe makes 12 mini pancakes or enough pancakes to feed two people. The quantity can easily be double or tripled to make more!


The Ingredients

  • 1 Banana, fresh or frozen, mashed with a fork

  • 1 Cup of Oat Flour or Rolled Oats blended if you don't have flour

  • 1 Teaspoon of Baking Powder

  • 1 Cup of Water


Tip: If you are using whole rolled oats place them in a blender and process to flour, I like leaving mine a bit chunkier than regular flour but just grind to your own preference.

If you are camping or loving van life you can use a usb blender such as this one from Amazon or if you have power available I recommend the NutraBullet as my go to home blender. I love it for making smoothies, cashew cream and creating. I recommend this one and it comes with Free delivery for Amazon Prime members!


The Method – Could it get any simpler?


  1. Add the oat flour, baking powder and mashed banana into a bowl, mix together to form a dough.

  2. Slowly pour in the water until the desired batter consistency is reached.

  3. Heat your pan to a medium hot temperature, add a small amount of oil to the pan and use a paper towel to coat evenly

  4. Pour the batter in and allow to cook until they are cooked nearly through, if I am using a thicker batter I find they cook better if I put a lid on the pan for a minute to help them cook through without burning the bottom.

Make it Incredible!

Serve with maple syrup and fresh fruit or peanut butter and chia jam :)
