Creamy Mushroom & Macadamia One Pot Pasta

I honestly don't know where to start with describing this dish. Its life changing.


It takes under 30 minutes to prepare, can all be done in one pot on the road and is so silky and delicious I ended up eating all the left overs I had saved for the following days lunch.


My picky pasta aficionado daughter even rated it as THE BEST PASTA EVER.


I think I agree with her.

Vegan Mushroom One Pot Pasta Vanlife Recipe

Creamy Mushroom & Macadamia One Pot Pasta



The Ingredients

  • 250g of Swiss Brown Mushrooms

  • 1 Medium Brown Onion Diced

  • 1/2 Cup of Roughly Chopped Macadamias

  • 250g of egg free pasta, bite sized shapes like Penne or Farfalle work well

  • 1 Sprig of Fresh Rosemary torn into smaller pieces, reserve some to serve*

  • Two Cups of Almond Milk**

  • 1 Cup of Water

  • Two Vegan Chicken Stock Cubes***

  • Cracked Black Pepper to Serve

  • Optional a handful fresh rocket or baby spinach

The Method – Could it get any simpler?

  1. In a large pot or pan add a splash of oil & saute diced onion till translucent

  2. Add quartered mushrooms and roughly chopped macadamias. Cook for 3 to 5 minutes or until mushrooms are slightly browned.

  3. Mix in pasta and fresh Rosemary, stir to coat

  4. Pour in Plant Based Milk, water and two vegan stock cubes.

  5. Cook over low heat, stirring gently until pasta is al dente.

  6. If necessary add another cup of water in small increments until pasta is Al dente

  7. Serve with fresh cracked and Nutritional Yeast


* Dried Rosemary or anotgher herb can be used here if you prefer

** Can be substituted with other non dairy milk if required but make sure its unsweetened

*** I like Massels stock cubes, 100% natural and vegan

Make it Incredible!

I like to get extra greens in wherever possible so we usually add a handful of spinach or rocket to the pot just before serving.

Swiss Brown mushrooms are one of my fave to use in pasta dishes but you could substitute them with plain button or cup shrooms or jazz it up with some oyster or porcini.


To add a cheesy flavour just sprinkle with some Vitamin B rich Nutritional Yeast before serving!


Want some spice? Dried chilli flakes are one of my store cupboard staples and would go really well on this!
